the history of food is written by grandmas, and we think we’ve got one of the best: madame bay her secret recipes were developed with care, love, and a healthy dose of cheekiness – all important ingredients when you’re cooking a banquet for 13 children every day!

Ray, our head chef, co-founder, and one-half of the Banh Bao Brothers, is madame bay’s last student. together, we will be honouring her legacy, continuing her legend, and keeping the flavours alive in London.
